Weekday mornings are very hectic at my house, this year all the kids are off to school including Julius who now goes to TK. With so many kids to pack off to class including one of my oldest who is going to college, it's hard to make sure everyone has time to eat before heading out at 7AM. But making sure my kids don't head to school on an empty stomach is important to me. Seven hours in school is a long day for them and they will only get a small snack and lunch throughout the day. Now I know how my mom felt when I was growing up, and how like most Latina moms, she made sure nobody left the house until they had a full breakfast. 

While I don't have the talent my mom does in the kitchen, she can still cook up a full breakfast in 15 minutes, I can fry up and egg real quick and make the kids a breakfast sandwich that reminds me of my moms friend egg on a tortilla. As long as I have important staples in the fridge like: bread, eggs, and Gold n Soft spread, I can get a fried egg sandwich on each plate quickly. 

I love to indulge in this fried egg sandwich myself once I get back from dropping the kids off at school and before I start work. Find the recipe below along with the simple instructions for making this delicious morning sandwich.

1 Egg
2 slices of bread
1/2 sliced avocado
1/2 sliced tomato
2 tbsp Gold n Soft
Salt n pepper

Instructions: Start cooking the fried egg in a medium sized pan - while the egg fries, you can slice the tomato and avocado. Butter one side of each bread and place tomato and avocado slices on top. Once the fried egg is ready, place on top of the avocado and cover with 2nd piece of buttered bread and place on pan to grill. Grill each side of the sandwich for about a minute or until golden brown. Slice in half and serve hot.
