Now that November has arrived, the holidays are officially upon us. It's time to start planning for all that the holiday season brings. There will be a lot of shopping in months to come: gifts, decor and shopping to get ready for holiday get together's with familia. Being a Mexican family, we are all about eating during the holidays, in fact you might say that the eating will be our favorite part of the holidays. 

With so many family events and parties, it can sometimes be hard to come up with new meal ideas for each event. Of course there are all of the traditional Mexican dishes like tamales and posole. But those dishes take a long time to prepare and with everything that is going on you also need some fast and easy options. And to tell you the truth, I don't know how to make either tamales or posole, those are the dishes my mom makes.  

But something I know that I can always make because it's such a big hit is a shrimp cocktail. This is a dish that everyone loves and thank goodness, it's pretty easy to make. I spend more time doing the prep of cutting the veggies, than I do actually making it. Today I will share how easy it is to make my Chipotle Shrimp Cocktail. 

For this recipe I went shopping to Cardenas, which happens to be on the same street I live on. Having a Cardenas so close has been one of the perks of living in this town. 

Chipotle Shrimp Cocktail (serves 4)

1 pound of cooked shrimp
1 1.2 cups of tomato juice
1/4 cup diced cucmber
1/4 cup diced celery
1/4 diced peeled tomato
1/4 cup diced white onion
juice of 1 lime
1 tablespoon minced garlic
3 tablespoons La Morena Chipotle Peppers
2 hass avocaods
salt & pepper to taste
This is the favorite part of this shrimp cocktail for me. I could have this on tostadas without the shrimp. It's so easy to make too.

1: in a large bowl pour tomato juice
2: pour in diced cucumber
3: pour in diced celery
4: pour in peeled and diced tomato
5: pour in diced onion
6: pour in lime jiuce
7: pour in minced garlic
8: add 3 tablespoons of La Morena Chipotle Peppers sauce
9: add salt & pepper to taste

Now that your cocktail mix is ready you need to refrigerate it for at least 2 hours. You want to allow all the flavors to marinate as long as possible. If you have the time, overnight is great. 

Once your cocktail mix had time to marinate, it is time to build the Chipotle Shrimp Cocktail. I am serving portions for a meal but you can serve these up in small plastic cups as an appetizer as well. 

Fill half of your cup with the cocktail mix and layer with a generous portion of diced avocados. Now add cooked shrimp to the sides of the cup and serve with crackers or tortilla chips. This version of Shrimp Cocktail does not feature ketchup, but you can always offer it as an option for your guests.

This dish has so much flavor, so much crunch and it has that fantastic chipotle kick, you're going to have to hand out the kleenex. And don't forget when it's time to serve to bring out the ice-cold Cola-Cola! Now you have the perfect dish served with everyone's favorite soft drink Coca-Cola!
