It's almost the end of May and I can already see (and feel) summer on the horizon. The kids are excited for the end of the school year and for a summer that promises to be full of fun and adventure. There's going to be a trip to Knott's Berry Farm, a few trips to the beach and swimming lessons! It's going to be a blast! Of course I will still be as busy with work as I am now, but I will have to work my schedule around so that I can spend as many quality day hours of summer with Sammy as possible.
As we prepare for summer and all of the adventures that are sure to come, I am also planning ahead to stocking up my pantry full of easy snacks for all of us. It is going to be summer, which is a time to enjoy all things to the max, but for me it's still going to be "smart snacking". Smart snacking just means that I can enjoy what the kids enjoy, but in a smaller portion or in a lower calorie pack. One of my favorite all time snacks is rice pudding and I love Kozy Shack's Simply Well Rice Pudding which has all of the flavor of my favorite pudding, with only 90 calories. Just because I have to cut down on calories, doesn't mean that I have to cut down on flavor.
